Cascone's Sicilian Baked Whitefish


4 pieces 6-8oz Tilapia or Orange Roughy 

1/4 cup extra-virgin olive oil 
1 teaspoon kosher salt 
1 teaspoon black pepper
1 jar Cascone's Marinara Sauce or 1 jar Cascone's Garden Style 
1/4 cup white wine (optional replace with chicken or fish stock) 
2 tablespoons fresh minced garlic 
2 tablespoons fresh chopped oregano 
10 chopped kalmata olives

Start by placing your Whitefish in a large casserole dish. Season your fish with olive oil, kosher salt and black pepper on both sides. Place your fish in the in the casserole pan and top with fresh garlic, kalmata olives and oregano. Pour a 26oz jar of Cascone's Marinara Sauce over the seasoned fish. Add your white wine. Bake for 15-20 minutes at 350 degree or until the fish becomes flakey. Serve with mashed or rosemary potatoes and steamed garden vegetables.
