Cascone's Sicilian Baked Whitefish


4 pieces 6-8oz Tilapia or Orange Roughy 

1/4 cup extra-virgin olive oil 
1 teaspoon kosher salt 
1 teaspoon black pepper
1 jar Cascone's Marinara Sauce or 1 jar Cascone's Garden Style 
1/4 cup white wine (optional replace with chicken or fish stock) 
2 tablespoons fresh minced garlic 
2 tablespoons fresh chopped oregano 
10 chopped kalmata olives

Start by placing your Whitefish in a large casserole dish. Season your fish with olive oil, kosher salt and black pepper on both sides. Place your fish in the in the casserole pan and top with fresh garlic, kalmata olives and oregano. Pour a 26oz jar of Cascone's Marinara Sauce over the seasoned fish. Add your white wine. Bake for 15-20 minutes at 350 degree or until the fish becomes flakey. Serve with mashed or rosemary potatoes and steamed garden vegetables.

Today, owners Frank, George, and Jim still run the restaurant. Along with Johnny Cascone's in Overland Park, KS, they manage to keep a strong Cascone presence in both locations.

Cascone's Chicken Cacciatore


1 Jar of Cascone's Garden Style Sauce or Cascone's Marinara Sauce 

Extra-virgin olive oil 
Kosher salt 
freshly ground black pepper 
1 1/2 cups all-purpose flour 
2 tablespoons garlic powder 
1 tablespoon dried oregano 
1 (3 1/2-pound) whole chicken, cut into 8 pieces 
2 green peppers, sliced 
1 pinch red pepper flakes 
1/2 bunch fresh basil, hand-torn (1/4 bunch to flavor the base, 1/4 bunch to finish the dish) 
1 cup table white wine

Start by preparing your flour. Add kosher salt, black pepper and garlic powder. Dredge the chicken pieces in the seasoned flour. Place your breaded chicken in a large skillet or Dutch oven, cover with olive oil. 

Sautee your chicken pieces skin side down for about 7 minutes. Drain and clean your pot. Add your chicken, sliced peppers, white wine, oregano, red pepper flakes and a jar of Cascone's Garden Style Pasta Sauce. Add chicken stock or water if your sauce looks too thick. 
Cover and bake for about 20 minutes at 350 degrees or until your chicken is cooked. Top with fresh basil and serve. You can serve this dish over polenta, rice or pasta

History of Cascone's

John, LeRoy, and Sam Cascone started in the restaurant business over 40 years ago with a small diner on Locust trafficway near downtown Kansas City, MO. In those early days, the Cascone brothers were well known for their Italian Breaded Steak Sandwich, and we think the first in the area to develop the Italian hardroll on which the sandwich was served.
In 1954, John and LeRoy Cascone opened a full service restaurant at 3733 N . Oak in Kansas City North, Mo. Table service, a full dinner menu and the emergence of Cascone's famous lasagna occurred on North Oak. Since that time, lasagna has been the single most favorite entree at Cascone's; over 2 million orders served and still one of our trademark dinners.
With John's death in 1961 and LeRoy's death in 1963, Jennie Cascone, John's wife, owned and operated Cascone's Restaurant with the help of her children. After Jennie's death in 2003, her sons and daughter continues to monitor the success of the business. Cascone's owners/operators today include George Cascone, Frank Cascone, his wife Vita Ann, son Victor, and daughter Georgia; Jim Cascone and his wife Sara, and Lucille Hotchkiss. Larry Cascone's wife Jeanne, sons John and Tom operate Tommy's Bar & Grill in Gladstone, MO.
Our restaurant in Overland Park is named for our father, John Cascone, and our restaurant in Gladstone, Tommy's, is named for a close uncle.
